Mediterranean Pasta Salad

During the summer the pasta salad is one of my favourite dishes: it is quite light and fresh, and you can change the ingredients whenever you want. This is one of my family's most appreciated version.


Penne 150 gr
Tomatoes 1 - 2
Mozzarella 1
Olives 15
Extra virgin olive oil
Garlic 1 clove

2 servings  

  1. Chop the tomatoes, the garlic and the mozzarella.
  2. After you cook the pasta, add all the ingredients except for the mozzarella and let cool down.
  3. When the pasta is cold, add the mozzarella. In this way it won't melt. 
  4. Add the olive oil and a little bit of origano if you like it.
