Tomato and Egg Pie

Today I'm going to show you a main course, quite easy to do and very good, especially during the summer, when you don't want to cook a lot of things :) Yes, you have to use the oven, but it's worth the job!

Tomatoes 600 gr
 Puff pastry 400g
Mozzarella 125g   
 Eggs 4
 Butter 10 gr
Olive Oil 2 tbspoons
Grated Parmesan cheese 2 tbspoons
Milk 2 tbspoons
 Garlic 1 clove

  • Slice the tomatoes.
  • Drain the mozzarella and cut into slices.
  • Beat the eggs with a pinch of salt. Then add the olive oil, the chopped basil and the garlic.
  •  Now add the milk, the grated parmesan and mix it.
  •  Line a baking dish with the pastry and prick.
  •  Cover the baking dish bottom with the mozzarella and tomatoes slices.
  •  Put over the egg mixture.  
  • Now bake your pie in preheated oven at 200°, until the surface will be golden.
