During the summer the pasta salad is one of my favourite dishes: it is quite light and fresh, and you can change the ingredients whenever you want. This is one of my family's most appreciated version.
Ingredients
Penne 150 gr
Tomatoes 1 - 2
Mozzarella 1
Olives 15
Extra virgin olive oil
Garlic 1 clove
2 servings
- Chop the tomatoes, the garlic and the mozzarella.
- After you cook the pasta, add all the ingredients except for the mozzarella and let cool down.
- When the pasta is cold, add the mozzarella. In this way it won't melt.
- Add the olive oil and a little bit of origano if you like it.
