Lentil and Sausage Soup

Lentil and Sausage Soup

Lentil and sausage soup came up to my mind remembering the classic Polish soup "Żurek", which I've tasted last summer thanks to a friend. In fact, even that soup is cooked with carrots, potatoes and sausage, but  it is much more complicated. Mine is easy and delicious, you should definitely try it!



Ingredients
Lentils 150/200 gr.
Susages 400 gr.
1 Potato
1 - 2 Carrots
Onion 1/2
Pepper
Extra Virgin Olive Oil
Vegetable Stock or Water
Pepper
Salt

  • First, soak the lentils in cold water. I used those tiny ones that do not need this step, but I let them rest anyway for about two hours.
  •  Chop half a onion and half a carrot and stir fry in olive oil.
  •  When softened, place the sausage cut into pieces and cook for 10-15 minutes.
  •  At this point, drain the lentils and add to the sausage with three glasses of water or broth and cook with the lid.
  •  Add the salt, the pepper, the carrot and  the chopped potato.
  •  Cook for about half an hour.

Savoy Cabbage and Rice Soup

The Savoy Cabbage and Rice Soup is a light dish, but very very good. It's not difficult to make so you have definitely to try it!



Ingredients
1/2 Savoy Cababge
1/2 Onion
170 gr Carnaroli Rice
Vegetables Stock
Water
Grated Parmesan
Grated Pecorino
 Salt
Pepper
Extra Virgin Olive Oil

4 – 5 servings
  • Wash and cut the cabbage and stir fry in the chopped onion with a little olive oil. 
  •  Let it cook for few minutes and then cover with the vegetable stock (I do not use stock cubes) and cook about 20 minutes.
  •  At this point add the rice, pepper,salt and cheese and let cook a little less then the cooking time of the rice.
  • Let rest for few hours if you can, because it because better with the passage of time.
  • If it is needed, add water.

Red Lentil and Barley Soup - Thermomix

Yesterday I felt like eating a soup, so I decided to cook the red lentil and barley soup. I've used the 30 minutes cooking barley, because it was perfect to use with the red lentils, whose cooking time is the same. The tastier thing of this soup is definetely the bay leaves flavour, it gives that special something!
Obviously, you can do this recipe even without the Thermomix, following the same steps but using a normal pot.


Ingredients
250 gr. Red Lentils
50 gr. Barley
1,5 lt Water
1/2 Onion
4 Spoons Tomato Sauce
1 Teaspoon Tomato Paste
7 Bay Leaves
EV Olive Oil
Salt

Cooking time 35 minutes

4 servings


  • Grossly cut the onion and put in the Thermomix, mix for 5 seconds, speed 7.
  • Now add the extra virgin olive oil, the cut bay leaves and cook for 3 minutes, speed 1, 100°.
  • Add thered lentils, the barley, the water and cook for 15 minutes, speed 1, 100°.
  • Now add the salt and water if it is needed, and keep on cooking for 15 minutes, speed 1, 100°.
  • You won't need to blend because, at this point, the red lentils will be creamy and the barley will be perfectly cooked and it will gave consistency to the dish (to put in briefly, it won't seem like baby food)
  • Ready to eat!

Turmeric and Mint Courgette Soup - Thermomix

At home we have the Thermomix, but we use it rarely. Given that it is a great instrument to make soups, I 've decided to make a special courgettes soup. It does everything on its own, that's so cool!


Ingredients

1/2 Onion
600 gr Courgettes
600 ml Water
250 gr Potatoes
Extra Virgin Olive Oil
Parmesan
Salt
Turmeric
Mint

  • Grossly cut the onion and put in the Thermomix, mix for 5 seconds, speed 7.
  • Now add the extra virgin olive oil and cook for 3 minutes, speed 1, 100°.
  • Add the chopped courgettes, potatoes, water and salt and cook for 30 minutes, speed 1, 100°.
  • Now mix everything with speed 9 until it's creamy.
  • Add the turmeric, the mint and the parmesan and mix for a minute.
  • Ready to eat!

Carrot Soup - Easy and Light

I wanted to try this soup for a long time and today I've decided to cook it. I've looked for a recipe online, but in the end I've made my own recipe, with few ingredients but a lot of flavour.




Ingredients
8-9 Carrots 
1 Big Potato
1 Onion
Stock or Water
Salt
Extra Virgin Olive Oil

2-3 servings

  • Chop the onion, peel and chop the potato and carrots and let warm the olive oil in a pot.
  • Put the chopped onion in the pot, and let cook until it will become golden.

  • Now add the carrots and the potato and let cook for 10 minutes.
  • Add the stock (preferably homemade) anche let cook for about 45 minutes, half covered.
  • Add the salt.
  • Now whip with the blender and switch off the burner.

  • Add the spice you prefer. For an exotic flavour add cinnamon or curry. If you prefer to stay "traditional", add some black pepper. It will be good anyway!
  • I've chose cinnamon and it was GREATE!

Courgette Soup

Exactly, you got it, it's again that period of the year... SOUP TIME! I will post even other soup recipes, but today let's start with the courgette soup!





Ingredients
Courgettes 350gr.
Milk 50 gr.
Onion 1
Potato 1-2
Stock 1 litre
 Extra virgin olive oil
Salt

  • Chop the courgettes, the potato and the onion.
  • Put a little bit of olive oil in a pot with the chopped onion, and let cook until it will become golden.
  • Now add the courgettes and the potato and let cook for a bit.
  • Add the stock (preferably homemade) anche let cook for about 45 minutes, half covered.
  • Now whip with the blender and switch off the burner.
  • Add the milk and the soup it's ready.
Tip --->  It's better to use the the light green courgettes, because they are sweeter than the dark green ones.

Chickpeas and Potatoes Soup

I love soups, especially in winter. The recipe of today is a very easy soup, perfect for the cold days of winter and suitable to your taste, because you can add your favourite spice and personalise it. In my opinion, it would be very good with curry or rosemary.




Ingredients
Onion 1/2
Potato 1
Chickpeas 600 gr
Spaghetti/Linguine 20-30 gr
Water
Extra Virgin Olive Oil
Salt

5 servings

1) Chop the onion and let cook for a little with the olive oil in a pan.
2) When the onion is golden, add the potato cut into small pieces. Let cook for few minutes.
3) Now add water up to cover everything. Let cook until the potato is almost cooked.
4) Add the chickpeas. The chickpeas I have used were already cooked, so that's why I have added just in the end. If you use the dry ones, put in water the night before and cook them before the potato.
5) Cook for few minutes and the soup is ready.  Switch off the burner and add the pasta. Given that the soup will be very hot, after few minutes the pasta will be cooked. In the end, add salt.

Easy Lentils Soup + Curry Version

Hello people, 
Here I am with another soup's recipe! I've told you, I really ADORE soups in winter, so take this recipe ;)


Ingredients
Onion 1/2
Potato 1
Lentils 200 gr
Spaghetti 20-30 gr
Water
Extra Virgin Olive Oil
Salt
                                                                                                                                        
6 servings


1) Chop the onion and let cook for a little with the olive oil in a pan.
2) When the onion is golden, add the lentils. Let cook for about ten minutes. The lentils I have used were dry, so I have put them in cold water since the night before.
3) Now add the potato cut into small pieces and let cook for few minutes.
4) Add the water, up to cover everything.
5) Cook for about 1 hour and check the lentils until they will be cooked. 
6) When the soup is ready switch off the burner and add the pasta. Given that the soup will be very hot, after few minutes the pasta will be cooked. In the end, add salt.
7) For a spicy taste add curry. It adds a unique flavour!

Super Flavorful Goulash Soup

Hello world an Happy New Year!
This is my first post of 2014 and I've chosen a super tasty recipe to inaugurate the new year! What am I talking about? The gulash soup recipe! This dish is Hungarian, but it is widespread in all over the East Europe. There are two versions of the gulash: gulash soup or gulash meat, which is a stew with the same ingredients, more or less.
Let's see how to cook this gulash soup.


Ingredients

2 onions
1 carrot
500 gr potatoes 
1 pepper
600 gr of stew beef meat
1 garlic clove
3 teaspoons of sweet paprika
1 teaspoon of cumin
Olive oil
1 lt of vegetable stock (do it yourself!)
Salt

Preparation time: 3 hours

7 servings

1) Chop the onions grossly and cook over very low heat with a little bit of olive oil for 15 minutes. Be careful not to burn the onions, nor to become golden.
2) Add the clove og garlic, the teaspoon of cumin, the beef stew and let cook for few minutes.
3) Add the 3 teaspoons of sweet paprika, one spoonful of stock, salt and let cook over very low heat for 90 minutes with the saucepan lid.
4) Now you can add the chopped pepper and carrot, all the stock the and let cook for 45 minutes.
5) Now add the chopped potatoes (big pieces as the beef stew) and cook for 45 minutes.
With this very slow cooking, the meat will become very tender and the vegetables will remain compact.

My family liked this soup very much, hope you too!

P.s. I've taken this recipe from this site, which is very famous in Italy, but I've changed some ingredients and time of cooking.

Tomato Soup, Delicious and Healthy!

Good afternoon people, this is my last recipe of 2013 and I hope you like it!
Given that it's winter, I've thought about my favourite soup, the tomato soup! It's perfect to combat the cold and to start the diet after days and days of binges!


Ingredients
800 gr Peeled plum tomatoes  
1 Potato
1 Carrot
500 ml Water
1 Celery's stem
1 Onion
1 Clove of garlic
Extra virgin olive oil
Salt
Black Pepper
Oregano


1) Put a little bit of olive oil in a pot with the clove of garlic cut in half, and let cook until it will become golden.
2) Now take out the garlic and add the chopped carrot, onion and celery and let cook for 10 minutes over low heat. Add water if it is needed.
3) Add the peeled plum tomatoes and 500 ml of water, black pepper (as much as you like), salt and let boil. Cook over low heat for 15 minutes
4) Now add the chopped potato and let cook for 30 minutes.
5) At the end, add salt if it is necessary and whip with the blender.
