Salmon Burger

The Salmon Burger is an original way to eat salmon, which is one of my favorite fish and which I buy very often. You can taste it on its own or put it in a sandwich as if it were meat ... it will always be delicious!




Ingredienti
Salmon 300 gr
Mustard 2 teaspoons
Onion 1/2
Flour
Salt
Extra Virgin Olive Oil


  • Mince the raw salmon in a food processor with the onion.
  • Pour the mixture in a bowl and combine the mustard, the flour and the salt.
  • Mix everything and shape the salmon burgers.If it is needed add flour (better if it is the wholewhat one)
  • .Put the olive oil in a pan (just a little) and heat it. Then cook the burgers on each side.

Crispy Dill Salmon

You will have realized that the salmon is one of my favorite fish. The Crispy Dill Salmon is a recipe I've invented a long time ago and I do very often because it is my favorite one. You need few ingredients and baking makes it light, crunchy on the outside but moist inside. A real treat!


 Ingredients
  
1 Salmon Fillet
Breadcrumbs
Lemon Zest
Lemon Juice (a few drops)
Extra Virgin Olive Oil 
Dill


  • Remove the bones from the fish.
  • Mix the breadcrumbs with the dill on a plate, and then bread the salmon.
  • Put a little of lemon zest on the fish, a few drops of the juice and add breading.
  • Sprinkle with a little olive oil and bake for 30 minutes at 180 °.
  • I do not add salt because for me it is already quite tasty like this, but if you like it to add it directly in the breading.

Codfish Balls with Savoy Cabbage - Light and Tasty

Today I've decided to cook the codfish balls to change recipe and not doing in the pan as usual. I had some leftover savoy cabbage so I've combined the two ingredients and the result has been very good and tasty! These codfish balls are light, without eggs and potatoes.



Ingredients

Frozen Codfish 2 fillets
1/4 Savoy Cabbage
Ricotta 1 spoon
Wholemeal bread  2 slices
Wholemeal Flour
Powdered Garlic
Pepper
Salt
Tahini 1 teaspoon (optional)
Extra Virgin Olive Oil

  • Let defrost the codfish fillets and drain them, otherwise the codfish balls will be too soft.
  • Let boil the savoy cabbage for 20 minutes.
  • Drain the savoy cabbage e put in the mixer with the cut fish, the bread, the ricotta, the spices and the tahini. The tahini is a paste made from ground, hulled sesame seeds used to make the hummus. I've done half dose without it and the result was very good anyway.
  • Now pour everything in a bowl and add a little flour to compact the mixture.
  • Now shape the balls and flour them.
  • Put the balls in a oven dish and pour a litthe olive oil on them. If it is needed ass some salt.
  • Bake at 200° for about 20-25 minutes. They have to be crispy outside and soft inside.
  • With this amount of ignredients I got 16 balls.

Teriyaki-inspired Salmon and Plain Rice

Last summer, when I was in Warsaw, I've eaten for the first time the Teriyaki Salmon. It was really delicious, so yesterday I decided to cook it at home but, unfortunately, the Teriyaki sauce needs specific Japanese ingredients as Mirin and Saké, which I didn't have. So I've looked how to replace those ingredients and I found out that you can use white wine instead of the sakè, and sherry or vermouth instead of the mirin. Obviously, if you have the Japanese ingredients use them!


Ingredients

For the Marinade
Soy Sauce- 2 spoons
White Wine- 1 spoon
Honey - 2 teaspoons
Sugar - 1 teaspoon
Malt Vinegar - 1 teaspoon
Ginger
Garlic - 1 clove
Extra Virgin Olive Oil

For the rest of the dish
Salmon - 350 gr
Basmati Rice - 2 coffe cups
Water
Salt

2 servings

  • Put all the ingredients for the marinade in the oven dish, included the garlic which I've cut into slices and the ginger. If you have the ginger powder, sprinkle a little bit, otherwise cut into slices like the garlic.
  • Now place the salmon fillet in the marinade and let rest at least one hour. The more it will marinate, the more it will be tasty.
  • After the marinate-time, cook the salmon in a very hot pan, starting from the skin side. During the cooking add the rest of the marinade.
  • In the meantime, boil and salt the water to cook the basmati rice.
  • When the salmon is ready, place in a plate with the portion of rice.
  • I prefer not to add salt because the soy sauce is salty enough to me.

Cod Loins with Baby Onions

Here I am with another fish recipe, super super easy. You just need wine and baby onions.

Ingredients
Cod Loins
Baby Onions
White Wine
Garlic
Extra Virgin Olive Oil
Salt

In this recipe it is difficult to say the amount of the ingredients, because it depends on how many people there are, on your taste... But I try to give you an idea! 
  • Take a clove of garlic and stir fry with the olive oil.
  • When it will be golden, add the frozen fish and let defrost.
  •  When it is cooked, simmer with the white wine until reduced and addthe baby onions.
  • When it is ready, season with salt.

Lemon Salmon and Courgettes

The salmon is a fish I like, but I always need to find a way not to let it be cloy, nasty. This recipe is very quick and easy, me and my boyfriend like it very much.



Ingredients
Salmon 450 gr
1 Lemon 
1 Tablespoon Créme Fraîche
Parsley
Black Pepper 
 Milk

  • Warm the pan. Place the salmon and let cook until you see that it is cooked until the middle.
  • At this point, turn the fish and let cook completely.
  • Now add the lemon juice until reduce.
  • Add the tablespoon of créme fraîche, and if it needeed, add a little bit of milk to make it creamy.
  • Add the parsley and the pepper.
  • Serve with a side dish of courgettes, cooked with a little bit of olive oil and chopped onion. Salmon and courgettes are the perfect match!

Fish Curry with Potatoes

When it comes to fish, my mother and I don't have many ideas about the recipe to use. Moreover,my father and my brother don't like it very much. But this recipe made my brother happy, so now it's time to share it with you!

Ingredients
Frozen Fish (as Cod)
Onion
Curry Powder
Milk
Flour
Boiled Potatoes

In this recipe it is difficult to say the amount of the ingredients, because it depends on how many people there are, on your taste... But I try to give you an idea! 
  • Slice the onion and stir fry with the olive oil and a little of curry powder.
  • When soften, add the frozen fish and let defrost.
  •  When it is cooked, add more curry powder, a fistful of flour and the milk, in order to make a gravy.
  • In the end, add the boiled potatoes to become tasty.
  •  Season with salt.

Baked Breaded Cod Fillets

I love to eat fish, and this recipe is a tasty way to cook it. I don't know many fish recipes because is not so easy to cook, but cooking is my passion and I'm learning so many things! By the way, let's see the ingredients.
 
 
 
Cod Fillets 3 - 4
Lemon Juice of 1 lemon
Breadcrumbs
Minced Parsley
Salt
Pepper
Olive Oil  2-3 spoons

  • If you are using frozen cod, let defrost.
  • Mix the lemon juice with salt, pepper and a little water. 
  • Put the mixture in a baking tray and marinate the fillets fot about 30 minutes.
  • Now drain the fillets and bread them with the breadcrumbs and the minced parsley.
  • Take another baking tray and put some of the lemon mixture on the bottom.
  • Place the cod fillets in it and put other mixture on.
  • Bake for about 20-25 minutes at 180°.

Butter and Parmesan Codfish Fillets

This recipe is very easy and quick, and you need just four ingredients to make it. Nevertheless it is really good and even people who doesn't like fish can appreciate it.



Ingredients

Cod fillets
Butter
Greated parmesan
Milk 

  1. Put a knob of butter in the pan. 
  2. When it is hot, place the cod fillets and let cook for few minutes.
  3. When the fish is almost done, addthe greated parmesan on it, and then add it even on the other side.
  4. At the end, add a dram of milk, in order to have a little of sauce that prevent the fish from drying.
That's it! I didn't add salt because it is not needed to me, but if you want you can add it.

Vinegar and Olives Tuna

The tuna is one of my favourite fish, because it doesn't have bones and you can cook it as a steak. Today I suggest you a recipe that in Sardinia is used to cook the rabbit, but I've used it to cook the fresh tuna, and the result was very good! Indeed even my brother liked it, and he doesn't like fish very much.



Ingredients
Fresh tuna 3 steaks
Extra virgin olive oil
Vinegar
Green olives 15-20
Bay leaves 7-8
Salt

Tasty fresh tuna

Happy Sunday everybody!

If you like eating fish you can miss this recipe! As you know, it is recommended to eat fish almost once or twice a week, because it is source of phosphorus, vitamins and so on. Sometimes I don't know how to cook it, but now I've discovered this way and I'll keep using it.


Ingredients
Fresh tuna
Wine vinegar
White wine
Onions (optional)
Cherry tomatoes
Bay leaves
Extra virgin olive oil
Salt

As usual, the recipe is very easy.
1) Put a little bit of olive oil in the pan and when it's hot add the tuna steak.
2) When both sides become golden, add the wine vinegar and cook until reduced.
3) If you want, add a little bit of white wine, but this step it's not necessary.
4) Add the onion, the cherry tomatoes and at least 4 or 5 bay leaves. Bay's taste is perfect with the tuna. Let cook.
5) When you think the tuna is cooked as much as you like, your dish is ready.
6) Season with salt.
