Nutella Tiramisu

Nutella Tiramisu

The Nutella Tiramisù is a variation of the classic Italian dessert.. one of the tastier ever!


Ingredients

Eggs 4
Mascarpone cheese 500 g
Sugar 5 spoons
Marsala 4 spoons
Unsweetened cocoa powder
Nutella
Lady fingers (savoiardi) 400-450 g


  • First, prepare the coffee and let it cool.
  • While the coffee is cooling down, prepare the cream. Take two bowls and separate the egg whites from the yolks.
  • Whip the egg whites very firm with the electric whips.
  • Without washing them, beat the egg yolks with the sugar. When the mixture will be smooth, add the mascarpone cheese and mix it.
  • Now, add the egg whites, embedding them very gently, to make sure that they won't deflate.
  • Add the Marsala wine and mix it.
  • Now take another bowl and put in at least 6 tablespoons of Nutella. Warm it so it will be more liquid.
  • Now you are ready to start. Put some cream on the pan.
  • Wet the lady fingers in the coffee. Not too much otherwise it will form an unpleasant liquid at the bottom of the pan.
  • Do the first layer of ladyfingers, then cover with cream, then add the Nutella with a spoon. From my experience I can tell you that you have to put a loto a Nutella so you can taste its flavour..
  • Make two layers and finish the job sprinkle the cocoa powder.
  • Refrigerate for at least an hour before serving.
  • Following the same procedure you can also do small portions as you can see in the photo!

Mixed Berries Cheesecake

The cheesecake is one of my favourite dessert, with its fresh and particular taste. It's perfect during summertime! This recipe comes from a friend of mine, whose mother is a great cook! Everyone loves this cake, so trust me if I say it's so good!



Ingredients
250 gr. Ricotta
250 gr. Mascarpone
100 gr. Butter
3 Eggs
1 Glass of Sugar
Vanilla
200 gr. Digestive Biscuits
170 gr. Mixed Berries
Mixed Berries Jam

  •  Make the cheesecake base: melt the butter in the microwave. Blitz the biscuits in a food processor to a fine crumb, add the melted butter and pulse until well combined. 
  • Tip into a 24cm springform cake tin and press down firmly into the base. Chill while you make the filling, at least for 1-2 hours.
  • Whisk the ricotta, the mascarpone, the eggs, the vanilla and the sugar.
  • Spoon over the biscuit base and smooth with a spatula.
  •  Bake at 180° for about 35 minutes.
  •  When the cake will be cold, spoon over the jam and the place the mixed berries.
  • Keep in the fridge.

Dark Chocolate Muffins

The Dark Chocolate Muffins have been very appreciated by my family. Aside from my mom who does not like the bitter of the dark chocolate, my brother made me cook them again immediately within a week! So if you love dark chocolate they are perfect for you, otherwise add a little sugar or replace the dark chocoalte with milk one!



Ingredients

130 gr Whole Wheat Flour
100 gr Dark Chocolate 70%
60 Brown Sugar
40 ml Extra Virgin Olive Oil
2 Eggs
2 Spoons Cocoa Powder
1 Glass of Milk
 8 gr. Baking Powder
Salt q.s.

  •  Mix the flour, the baking powder, the brown sugar and the cocoa powder in a bowl.
  •  After mixing a bit, add the salt. In this way it won't enter in contact with thebaking powder.
  •  In another bowl beat the egg with the milk and the oil.
  •  In a saucepan, melt the chocolate.
  •  Now combine all the ingredients and mix them with the whisk.
  •  Bake at 170 ° for 15 minutes.

Apple Roses

I really love apples, so I've decided to cook this super easy dessert! Cinnamon and apple are a perfect match, if you combine even the puff pastry the result have to be amazing! ;)

 

Ingredients 

1 rectangular Puff Pastry
2-3 Apples  
3 spoons of Brown Sugar 
Cinnamon q.s. 
A knob of Butter 
Lemon Juice


  • Wash and peel the apples.
  • Cut into thin slices and then put them in a bowl with the lemon juice.
  • In a pan, melt the butter and add the apple slices, with a little of cinnamon and brown sugar.
  • Cook until they soften, then keep aside.
  • Cut the pastry into strips, about 5 cm each, and place the apples on each strip as you can see in the picture below, overlapping them slightly.    
  • Fold the pastry over the apples and roll the strip on itself, forming a rose. Help yourself with your hands to not come out the rolled apples (it's harder said than done).
  • Keep on this process for each strip.
  • Place all the roses in the parchment paper on a baking sheet and add a little brown sugar on each rose.
  • Bake in preheated oven at 200 degrees for about 10 minutes, until golden.
  • At the end, add a little powdered sugar.

Carrot Cupcakes with Cream Cheese Icing

If sweets are not a bit special I do not like them, that's why I decided to make these Carrot Cupcakes with cream cheese  :) I 've started with a recipe with pumpkin and then I've changed almost everything... but the result has been amazing! Everyone loved it, even my brother that if there's no chocolate in a dessert, he doesn't eat it in principle! I consider it a great success. Moreover, as you will see from the ingredients, I'vetried to make a treat as healthy as possible, nevertheless they are delicious !!!



Ingredients
250 gr. Carrots
100 gr. Cornstarch
100 gr. Wholemeal Flour
100 gr. Almond Flour
100 gr. Brown Sugar
100 ml. Milk
50 gr. honey
50 ml. Extra Virgin Olive Oil
1 Egg
Orange Zest
Vanilla Flavor
8 gr. Baking Powder
Half a teaspoon of Baking Soda
a Pinch of Salt


Cinnamon Icing

200 gr Philadelphia (even light is fine)
Powdered Sugar q.s.
Cinnamon q.s.

  • Chop the peeled carrots in a mixer. If you do not have it, grate them.
  • Mix with the whisk the egg, the sugar and the honey.
  • When the mixture is smooth, add the chopped carrots and mix.
  • In another bowl, mix the cornstarch, the almond flour, the whole wheat flour, the baking powder and the baking soda.
  • Now add the mixture with the egg to the one with flour, mix with the whisk and add the milk and the oil.
  • Now add the vanilla, the orange zest and a pinch of salt and mix with the whisk until it will be well combined.
  • Take a muffin pan (I got 14 cupcakes) and fill the paper cups more or less for two-thirds.
  • Cook in preheated oven at 180 ° for 15-20 minutes. 
  • After they have cooled down, you can garnish with the Cinnamon Icing, mixing the cheese with the powdered sugar and cinnamon. The amount of sugar depends on your taste, then taste and then decide to add sugar or not. The cinnamon completes the taste of these cupcakes in a way that you can't imagine ... So delicious!

Toast with Apple & Cinnamon Compote

Breakfast is the meal I don't like the most, because I don't know what to eat and everything seems to be boring after a few days. So that's why I've decided to cook this recipe, which is very good and light!




Ingredients

1 Apple
1 Slice of Whole Wheat Bread  
1/2 Teaspoon of Brown Sugar
1/2 Glass of Water  
Cinnamon 
1 Low Fat Yoghurt


  • Peel the apple and after removing the seeds and the hard parts, cut into cubes.
  • Heat a pan and put the apple pieces without adding anything.
  • Cook for a minute or two, then add the sugar, the water and the cinnamon. Cook until it becomes soft and if you need it, add water.
  • Toast the bread.
  • When the apple is soft you are ready for breakfast. If you want you can blend everything, but I love to eat the apple pieces.
  • Pour the apple on toast and garnish with a few teaspoons of yogurt.
  • Eat the leftover apple eat with the yogurt, it s delicious!

Light Hot Chocolate - Super Yummy and Vegan

In Italy we love to drink hot chocolate in winter, but it is different from English and American Hot Chocolate because it is made with milk and not with water, and, above all, in Italy we want it to be very thick. This recipe is very similar to that one, but the milk is substituted for another kind of milk... Read the recipe to know more about it!


Ingredients for 1 hot chocolate
Hazelnut Milk 175 ml
Unsweetened Cocoa Powder 10 gr
Brown Sugar 1 teaspoon
Corn Starch 1 teaspoon
Dark Chocolate 5 gr

  • Take a small pot and place the ingredients inside, except the dark chocolate.
  • Whip with a whisk and heat the burner, not to hot.
  • Let boil and add the dark chocolate. Keep on whipping.
  • When it is boiling for 1-2 minutes turn off the burner and pour into a cup.
  • It is ready!

Banana Bread

The first time I heard about the banana bread I was in Nottingham, during my Erasmus (the best experience of my life) and I liked it so much that I've talked about it for ages. I really love the banana flavour in this treat, because it's not too strong, but it gives it something special. It is delicious, simply.


Ingredients

4 Ripe Bananas
2 Eggs
Flour 200 gr
Brown Sugar 100 gr
Butter 80 gr
Greek Yogurt 40 gr
1/2 teaspoon Cinnamon
Baking Powder 6 gr
Baking Soda 3 gr
Lemon Juice
Walnuts
Salt


  • Squeeze the peeled bananas with a fork, and sprinkle with a few drops of lemon juice in order not to turn black.  
  • Put the softened butter and sugar in a bowl and mix with a whisk.  
  • Then add the eggs, mix the ingredients and add a pinch of salt.  
  • Add the squeezed bananas and mix together.
  • Now add the sifted flour, the bakind powder, the cinnamon and the walnuts (how much you like).
  • Use a plumcake mold with the baking paper and pour the mixture in.
  • Bake in pre-heated oven at 180° for 50 minutes.

No-Bake Chocolate Corn Flake Bars

When I buy the corn flakes, I can't always finish them, so this recipe is to recycle leftovers and make tasty chocolate bars, no need to bake, just to stay in the fridge! Obviously, you can substitute dark chocolate for milk chocolate. or add hazelnut or peanuts... This recipe lends itself to various modifications!



Ingredients
200 gr Dark Chocolate
150 gr Corn Flakes
30 gr Butter
2 spoons Honey

  • Melt the chocolate, the butter and the honey in a pot with very low heat.
  • When everything is melted, turn off the heat and put the corn flakes in the pot. Mix well.
  • Now take a tray, put the baking paper on it and pour the mixture.
  • Push the mixture in the tray and flatten.
  • Let rest for at least 3 hours, and then cut in a rectangle shape.

Muffins with Chocolate Surprise

Hi people, and welcome back to my blog!
Here I am with a new recipe, chocolate muffins!So if you like muffins and chocolate you have to try this recipe :) 



Flour   220 gr.
Sugar   110 gr.
Cocoa Powder   40-50 gr.
Baking Powder   2 ½ tsp 
Butter   90 gr.
Milk   200 ml.
Eggs   2
Little Chocolate Eggs   12

  • In a bowl, sift the flour, cocoa, and baking powder.  
  • Add the sugar.  
  • In another bowl, beat the eggs with cold butter and 1/3 of the milk. 
  • Combine the liquid ingredients to the dry ones
  • Add the remaining milk.  
  • Pour 1-2 tablespoons of the mixture into each muffin mold.  
  • Place the chocolate egg in the center of every muffin. Fill with more mixture.  
  • If you want, you can use the paper cups and put them into the muffin tray
  • Bake at 180 degrees for 15 minutes.

Frothy Coffee Dessert

You want to prepare a super easy dessert using coffee and milk? Well, read my recipe!


 Ingredients
Milk 2 glasses
Coffee 1 glass
Powdered Sugar 60 gr.


  •  Deep freeze 2 glasses of milk and one of coffe. Use plastic glasses.
  • When they are freezed, put all the ingredients in the Thermomix using the Thermomix butterfly, Speed 1, for 4 minutes.
  • Eat quickly before getting down.

White Chocolate Gelato - Ice cream

This recipe is very easy, but you will need a Thermomix or a ice-cream maker. Last time I posted the chocolate gelato recipe, this time we are going to cook the white chocolate ice cream!
 You can see the white ball in the picture, the other balls are "chocolate" and "tiramisù".


Ingredients
Whole Milk 300 ml
White Chocolate 130 gr.
Double Cream 100 ml
Sugar 90-100 gr

  • Cut the chocolate into small pieces and melt it with a portion of the milk in a double boiler.
  • When it is completely melted, transfer to a bowl.
  • Combine the remaining milk, in which has been previously melted the sugar, and ad the double cream.
  • Mix well.
  • Store in the refrigerator for about 15 minutes.
             
            Thermomix Version
  • Pour the mix in a wide food container and put in the freezer for at least 10 hours.
  • After that, cut the ice cream in pieces, put them in the Thermomix and whisk for 20 secs, speed 7, and then 10 secs, speed 5, spatuling.
  • Now it's ready!

          Ice Cream Maker Version
  • Put the ice-cream maker cooling container into the freezer until it's frozen.
  • Put athe mixture in the ice cream maker for 45 minutes.
  • Obviously you have to follow your ice-cream maker instructions.

Cheesecake Brownies

The cheesecake is a wonderful treat, and so are the brownies, so why not combine the two recipes? In some recipes there is the philadelphia instead of the ricotta, so you can choose what you prefer. It's a very good sweet to share with friends or to eat at breakfast.


Base
Dark Chocolate  200 gr.
Butter 130 gr.
Sugar 200 gr.
Eggs  3
Flour 100 gr.
Vanilla Extract 
Cream
Ricotta Cheese 250 gr.
Egg 1
Sugar 1 tsp
Flour 2 tbsp

  • In a small saucepan, melt the chocolate with the butter.
  • Transfer to a bowl and combine sugar, flour, eggs and mix well.
  • Prepare the cream. Place in a bowl the ricotta, egg, sugar, flour and some vanilla extract.
  • Line the baking sheet with the baking paper and pour in the chocolate mixture.
  • Pour the cream and, with a toothpick, make circles in order to mix the two creams together.   
  • Bake in oven at 180 degrees for 35 minutes.
  • When cold, cut into cubes.

Italian Chocolate Gelato - Ice cream

Is there anyone who doesn't like ice cream? I don't think so. This recipe is very easy, but you will need a Thermomix or a ice-cream maker. If I think about the "gelato", it comes to my mind the chocolate one, immediately. So that's why this is my first ice-cream recipe! You can see the dark brown ball in the picture, the other balls are "white chocolate" and "tiramisù".


Ingredients
Eggs 2
Whole Milk 275 ml
Double Cream 125 ml
Sugar 150 gr
Unsweetened Cocoa Powder 30 gr

             
            Thermomix Version
  • Combine all the ingredients for 5 minutes, speed 4, 80 degrees.
  • Pour the mix in a wide food container and put in the freezer for at least 10 hours.
  • After that, cut the ice cream in pieces, put them in the Thermomix and whisk for 15 secs, speed 9, and then 30 secs, speed 6, spatuling.
  • Now it's ready!

          Ice Cream Maker Version
  • Put the ice-cream maker cooling container into the freezer until it's frozen.
  • Place the eggs, the sugar and the cocoa powder in a bowl and whisk.
  • In a small pot warm up the milk with the double cream.
  • Pour the mixture in the pot and whisk.
  • Let it cool.
  • Put athe mixture in the ice cream maker for 45 minutes.
  • Obviously you have to follow your ice-cream maker instructions.

Coffee Muffins

I don't like muffins very much, because, in general, I'm tired of its taste after few bites. But this is not the case, because these muffins are very good! I've eaten two at breakfast so trust me!I found this recipe in this italian site Le ricette della nonna, if you speak Italian have a look! There are a lot of delicious recipes!

 
Ingredients
Flour 200 gr
Sugar 150 gr
Oil 50 ml
Eggs 2
Istant Coffe 3 teaspoons
Milk 100 ml
Baking Powder 8 gr 

I got 11 muffins with these doses
  • Place in a bowl the eggs, the oil and the lukewarm milk, in which you put the istant coffee and mix it.
  • Take another bowl and place the flour, the sugar, the baking powder,a pinch of salt and mix it.
  • Now mix the two mixtures very well and fill the bun tray. You can use paper cups or put a little butter and flour in the tray.
  • Cook in pre-heat oven at 170/180°.

Fruit Tart

This is one of my favourite desserts. In Italian is "Crostata di frutta" and it is not so difficult to make. It's  wonderful, isn'it? To make it you need to cook the custard cream (click here to read the recipe) and the short crust pastry which I'm going to tell you my recipe.


Ingredients for the Short Crust Pastry for a Small Tart
Flour 500 gr.
Sugar 250 gr.
Butter 250gr.
Eggs 2
Salt 7 gr.
Baking Power 10 gr.
Lemon Zest 1

The secret to make a very good short crust pastry is working it as little as possible. Moreover, the butter must be at room temperature. You can do it by hand or by dough kneader, like I did.
  •  Place in the dough bowl the sugar and the butter, add the lemon zest, the baking powder, 1 egg and mix for about 10 seconds.
  • Now add the other egg and mix it for 15 seconds.
  • Mix it just a little more and add all the flour.
  • Now place it on the table with a little bit of extra flour.
  •  Form a ball, wrap in plastic wrap and let rest in the fridge for about 30 minutes.
  • Now that it's ready, place it in the cake pan and cook in pre heat oven at 180° for about 20-30 minutes.

  • When the short crust pastry is ready, put your custard inside.
  • Now you can cut the fruit you prefer and garnish your tart. Do not forget to put the gelatin over the fruit to keep it from blackening.

Crema Pasticciera - Italian Custard

The "crema pasticciera" is a very famous custard in Italy. It's used to make tarts, to stuff cakes and so on. It is insomuch good as you can eat it by itself as well!



Ingredients

Flour 50 gr
Sugar 100 gr
Egg yolks 4
Milk 500 ml 
Lemon zest

  • Whip the yolks with the sugar, 200 ml of milk and the flour.
  • In the meantime, warm up the remaining 300 ml of milk with the lemon zest.
  • Now add the warm milk to the mixture you prepared before, mix a little and then put on the burner.
  • Keep on blending and be careful not to boil. When is almost boiling, switch off the burner.
  • To avoid the surface to create a kind of hard layer, put the cling film in contact with the custard.
  • Top tip: If you don't know how to use the remaining eggs white, you can do this custard with three whole eggs instead of using just the yolks. It will be good as well!

White Chocolate Ganache

Everyday I try not to eat fatty food, but sometimes everybody needs chocolate... And when you put the chocolate sauce on a delicious cake (like this one)...  What could be better than that?

Ingredients

300 gr White Chocolate
200 ml Cream

  • Cut the white chocolate into pieces. Obviously, you can do this recipe with every chocolate you like.
  • Take a pan, switch on the burner and let warm up the cream.
  • When it boils, add the chocolate and let melt.
  • Put the ganache on your cake and wait until solidify and your cake is ready!
 The ganache is very good even inside the cake, not just on it ;)

Orange Plumcake

I don't post sweet recipes very often, so I've thought that this is the right moment for it! This recipe is not complicated but I like it very much. The orange flavour adds that little extra something that makes this cake special.



Ingredients

Flour 250 gr.
Butter 170 gr.
Sugar 250 gr.
Eggs 4
Milk 50 gr.
Orange juice and zest 1
Baking powder 16 gr./3 teaspoons

  • Place in a bowl the sugar and the orange zest and mix it with the whisk.
  • Now add the eggs and the butter, which must be room-temperature and soft. Whisk.
  • Add the milk, the orange jucie, the flour and the baking powder.It is better to sieve the flour with the baking powder. In this way they mix together.
  • Preheat the oven at 170°.  Then, take a cake pan and you can choose whether or not to grease the pan or to use the baking paper.
  • Put into the oven for 45 minutes.
  • When it is cold, sprinkle with the icing sugar.

Chocolate Yogurt Cake

Good Sunday to all of you!

Do you remember my "yogurt cake" recipe? This is the chocolate version! As the other one, is very very easy, you have just to put the ingredients together! Very important: the unit of measurement of this recipe is the yogurt pot! So when I'll write 3/4 of oil, I'll mean 3/4 of a yogurt pot. Anyway, if you are not sure about something, just tell me!



Ingredients
1 yogurt
2 and half yogurt pot of flour
0,5 (half) pot of cocoa powder
1 and half of sugar
3/4 of oilseed
2 eggs
16 gr yeast (2 tbsp of the dry one)
Vanillin
Salt
Now you have to put all these ingredients together and mix them until the mixture will become creamy. Then, take a cake pan and you can choose whether or not to grease the pan or to use the baking paper. Then preheat the oven at 180° (celsius) and let cook for about 30 minutes. Check the cake in order not to burn it :)
