Chicken Breast with Vegetables Mix

This recipe is easy as always and I want to share it with you because it's a really good way to eat chicken with vegetables without cooking a greasy dish. Let's see the ingredients!


Aubergines 1
Courgettes 1
Potatoes 1
Peppers 1
Onion 1
Chicken breast 
Oregano
Olive oil
Salt

3 servings

  •  Preheat the oven at 180°-200°.
  • Chop the vegetables and add a little bit of olive oil and the oregano.
  • Put in the oven for 40 minutes and turn sometimes in order not to burn the top.
  • Now add the chopped chicken and cook for further 20 minutes.
  • Season with salt.

Enjoy your meal!

Lentil and Sausage Soup

Lentil and Sausage Soup

Lentil and sausage soup came up to my mind remembering the classic Polish soup "Żurek", which I've tasted last summer thanks to a friend. In fact, even that soup is cooked with carrots, potatoes and sausage, but  it is much more complicated. Mine is easy and delicious, you should definitely try it!



Ingredients
Lentils 150/200 gr.
Susages 400 gr.
1 Potato
1 - 2 Carrots
Onion 1/2
Pepper
Extra Virgin Olive Oil
Vegetable Stock or Water
Pepper
Salt

  • First, soak the lentils in cold water. I used those tiny ones that do not need this step, but I let them rest anyway for about two hours.
  •  Chop half a onion and half a carrot and stir fry in olive oil.
  •  When softened, place the sausage cut into pieces and cook for 10-15 minutes.
  •  At this point, drain the lentils and add to the sausage with three glasses of water or broth and cook with the lid.
  •  Add the salt, the pepper, the carrot and  the chopped potato.
  •  Cook for about half an hour.

Honey and Lemon Chicken

Hi people, I'm back! I was really really busy these days so I didn't had time to post new recipes but here I am now! This recipe is easy but very good, as always! Are you ready?


Ingredients

2 Chicken Breast
1 Lemon
3 teaspoons of Honey
Extra Vergin Olive Oi1 
1 glass of White Wine
Salt

  • Cut the chicken breast into little stripes and flour it.
  • Put some olive oil in a pan and let warm. When it is warm enough, add the chicken. 
  • Let cook well and then simmer with the white wine until reduced.
  • Then add the lemon juice and let cook slowly.
  • At the end, add the honey and let caramelize. Season with salt!

Salmon Burger

The Salmon Burger is an original way to eat salmon, which is one of my favorite fish and which I buy very often. You can taste it on its own or put it in a sandwich as if it were meat ... it will always be delicious!




Ingredienti
Salmon 300 gr
Mustard 2 teaspoons
Onion 1/2
Flour
Salt
Extra Virgin Olive Oil


  • Mince the raw salmon in a food processor with the onion.
  • Pour the mixture in a bowl and combine the mustard, the flour and the salt.
  • Mix everything and shape the salmon burgers.If it is needed add flour (better if it is the wholewhat one)
  • .Put the olive oil in a pan (just a little) and heat it. Then cook the burgers on each side.

Veggie Burger


 I love burgers in every way, made by veggies, meat or fish they are always delicious! My recipe is very easy to cook and very good to eat :)



Ingredients

Chars (or Spinach)
Onion
Extra Virgin Olive Oil
Ricotta Cheese
Turmeric
Breadcrumbs
Salt


  •  The doses in this recipe are impossible to give, you need to add or not ingredients by eye and your taste.
  • Saute the chard with a little onion in olive oil. Add salt.
  • When cooked, let cool down.
  • In a blender or food processor, process the chard.
  • Transfer everything in a bowl, add the ricotta cheese, breadcrumbs and turmeric (or other spices of your choice) and mix everything. Add breadcrumbs until you will be able to shape a burger which is not going to break. 
  • Shape the burgers. 
  •  Put a little oil in a pan, heat it and then cook the burgers on both sides.

Crispy Dill Salmon

You will have realized that the salmon is one of my favorite fish. The Crispy Dill Salmon is a recipe I've invented a long time ago and I do very often because it is my favorite one. You need few ingredients and baking makes it light, crunchy on the outside but moist inside. A real treat!


 Ingredients
  
1 Salmon Fillet
Breadcrumbs
Lemon Zest
Lemon Juice (a few drops)
Extra Virgin Olive Oil 
Dill


  • Remove the bones from the fish.
  • Mix the breadcrumbs with the dill on a plate, and then bread the salmon.
  • Put a little of lemon zest on the fish, a few drops of the juice and add breading.
  • Sprinkle with a little olive oil and bake for 30 minutes at 180 °.
  • I do not add salt because for me it is already quite tasty like this, but if you like it to add it directly in the breading.

Sardinian Polenta with Sausage Tomato Sauce

Have you ever tasted the Sardinian Polenta? In Sardinia we don't have a great tradition of polenta like  in Northern Italy, and this recipe of the few one in which we use it. I have discovered it at my boyfriend's house and I can't tell you how good it can be ... it is delicious!



Ingredients

Polenta
Grated Parmesan
Grated Pecorino

Giving doses of this dish is impossible, so try to regulate by eye.
  • First prepare the sausage sauce following my Sardinian recipe (click here).
  • Cook the polenta following the instructions in the box. Keep in mind that to make this recipe polenta should be well compact.
  • When it is cooked, pour it on a baking sheet or on a cutting board and let it curdle and cool.
  • When it is cold, cut it into cubes, not too large.
  • Take the oven dish in which you will bake the polenta and put some tomato sauce
     on
    the bottom the first layer of polenta.
  • Cover with the sauce, the parmesan and the pecorino, and keep up until all the ingredients will be finished.
  • Bake at 180 degrees for 10-15 minutes, just to allow to melt the cheese.

Tex-Mex Fajitas - My Recipe

My family and I really love Fajitas! In every place I go, the fajitas recipe is different. Some version is very hot, another has two kind of meat... Seems like everybody has his own fajitas recipe, so that's mine!



Ingredients
800 gr Chicken Breast
400 gr Red Beans
1 Yellow Pepper
1 Red Pepper
1/2 Onion
Tex-Mex Spices
Salt
Tortillas


  • First you have to cut the peppers into thin strips and stir fry with olive oil and the chopped onion.
  • While the peppers are cooking, cut the chicken breast lengthway, into long strips, more or less of the same size of the peppers.
  • When the peppers are almost ready, add the chicken and let cook.
  • Add the Tex-Mex spices, the salt and if you want, even the Tex-Mex sauce, the red one with tomato and peppers inside.
  • When even the chicken is cooked, aff the red beans and turn off the heat.
  •  Add some salad, tomatoes and sweet corn in every tortilla.
  •  So yummy!!!

Salmon and Courgette Risotto

I haven't posted a risotto recipe for a while, so here I am, using two ingredients that I really love: salmon and courgettes. Read the recipe below!




Ingredients
Carnaroli rice 250 gr
Fresh Salmon 150 gr.
White wine 1/3 glass
1/2 Onion
Butter
Vegetable stock
Courgettes
Extra virgin olive oil
Philadelphia 2 spoons
Salt

3 servings 
 
  • Cut  the salmon and stir fry in a pan with a little bit of olive oil and onion.
  • Add the rice and let cook for few minutes, until it will become translucent.
  • Now, simmer with white wine until reduce.
  • Add the stock gradually, it must be boiling.
  • In another pan stir fry the chopped courgettes with the chopped onion and a little of olive oil.
  • When the risotto is almost ready, whip the courgettes with 2 spoons of Philadelphia.
  • Now switch off the burner, add the courgette cream and the risotto is ready!

Teriyaki-inspired Salmon and Plain Rice

Last summer, when I was in Warsaw, I've eaten for the first time the Teriyaki Salmon. It was really delicious, so yesterday I decided to cook it at home but, unfortunately, the Teriyaki sauce needs specific Japanese ingredients as Mirin and Saké, which I didn't have. So I've looked how to replace those ingredients and I found out that you can use white wine instead of the sakè, and sherry or vermouth instead of the mirin. Obviously, if you have the Japanese ingredients use them!


Ingredients

For the Marinade
Soy Sauce- 2 spoons
White Wine- 1 spoon
Honey - 2 teaspoons
Sugar - 1 teaspoon
Malt Vinegar - 1 teaspoon
Ginger
Garlic - 1 clove
Extra Virgin Olive Oil

For the rest of the dish
Salmon - 350 gr
Basmati Rice - 2 coffe cups
Water
Salt

2 servings

  • Put all the ingredients for the marinade in the oven dish, included the garlic which I've cut into slices and the ginger. If you have the ginger powder, sprinkle a little bit, otherwise cut into slices like the garlic.
  • Now place the salmon fillet in the marinade and let rest at least one hour. The more it will marinate, the more it will be tasty.
  • After the marinate-time, cook the salmon in a very hot pan, starting from the skin side. During the cooking add the rest of the marinade.
  • In the meantime, boil and salt the water to cook the basmati rice.
  • When the salmon is ready, place in a plate with the portion of rice.
  • I prefer not to add salt because the soy sauce is salty enough to me.

Chicken Escalopes with Champignon Mushrooms

After all these days of feastes, we need to eat something lighter. This recipe is tasty but light, perfect to eat something good but not fat ;)



Ingredients

Chicken Escalopes
Garlic
Parsley
Champignon Mushrooms
Flour
Salt
Milk
Extra Virgin Olive Oil
  • Stir fry the clove of garlic with the olive oil. 
  • When it is golden, add the chopped and washed mushrooms and the parsley.
  • When the mushrooms are almost ready, flour the chicken escalopes and add them to the mushrooms.
  • Let cook for few minutes and then add some milk to make a creamy sauce.
  • Season with salt.

Gorgonzola and Walnut Risotto

This is really a comfort food, I mean, winter, risotto, cheese... it's perfect. The Gorgonzola and Walnut Risotto will make the sunlight shine in your kitchen. Am I clear enough about how much I like it?

 

 Ingredients

280 gr Carnaroli Rice
600 ml Vegetable Stock
20 gr Butter
1/2 a glass White Wine
1/2 Onion
150 gr Gorgonzola (Blue Cheese)
Parmesan
Walnuts
Salt

4 servings
 
  • Finely chop the onion and stir with a knob of butter. 
  • When it will become golden, add the rice to toast it.
  • When the rice will become translucent, simmer with the white wine until reduce. 
  • Add the stock gradually and let start to count the minutes necessary to cook the rice since now. It must be boiling in order not to interrupt the cooking of the rice.
  • When the rice is almost ready add salt.
  • Now switch off the burner and add the Gorgonzola cheese and the parmesan. Taste it to know if put enough gorgonzola or not
  • Add some walnut to complete the dish.

Homemade Tagliatelle with Mushrooms and Sausage

If you don't know how to do the fresh pasta, don't worry because it's not complicated nor necessary. You can buy normal pasta. About the sausege, on the other hand, this recipe will be fantastic if you find Italian sausages, but it will be good with any other sausage.


Ingredients

400 gr Mushrooms
300 gr Fresh Pasta
250 gr Sausage
1/4 Onion
1 Clove of Garlic
Parsley

4 servings

  • Stir fry the washed mushrooms with the chopped onion and the garlic.
  • When they are almost cooked, add the crumbled sausage and stir fry until is cooked.
  • Add the minced parsley.
  • When the pasta is ready, stir fry with the mixture for a minute.
  • In the end, add greek yogurt to make it creamy, but this step is optional (but delicious).

Cod Loins with Baby Onions

Here I am with another fish recipe, super super easy. You just need wine and baby onions.

Ingredients
Cod Loins
Baby Onions
White Wine
Garlic
Extra Virgin Olive Oil
Salt

In this recipe it is difficult to say the amount of the ingredients, because it depends on how many people there are, on your taste... But I try to give you an idea! 
  • Take a clove of garlic and stir fry with the olive oil.
  • When it will be golden, add the frozen fish and let defrost.
  •  When it is cooked, simmer with the white wine until reduced and addthe baby onions.
  • When it is ready, season with salt.

Farfalle Pasta with Peppers Sauce

Here I am today with a simple recipe to season the pasta, when you don't have any idea. Easy, good and light!

Ingredients

2 Red Peppers
1 Small Onion
1 Spoon of Cream Cheese
Extra Virgin Olive Oil
Salt

  • Chop the onion and stir fry with a little of olive oil.
  • When it is cooked, add the chopped peppers. it doesn't matter if you don't chop finely, because they will be whipped in the end.
  • Let cook for about 20 minutes, until soften. Add the salt.
  • Let them cool for a bit.
  • Now whip with a blender, adding the cream cheese (Philadelphia kind).
  • That's it! Now add the sauce on your pasta.

Savoy Cabbage Rolls

 I've bought a very big savoy cabbage and I didn't know how to cook it, so I've done my usual internet researches and everybody talked about savoy cabbage rolls. So I decided to make my own version.



Ingredients
350 gr Mince Beef Meat
50 gr Bread 
1 Egg
1 Garlic Clove
Chopped Parsley
White Wine
Salt
Pepper
Cinnamon (optional)
With this amount of ingredients came up 13 rolls to me.

  • First, you have to boil for few minutes the cabbage leaves. You will need one for every roll.
  • In the meantime, place in a bowl the meat, the egg, the minced garlic and parsley, salt and pepper, and the bread, softened with water. Mix it until it is compact.
  • If you want, you can add some slice of salami or a sausage to make the meat tastier.
  • Now put a meatball in the cabbage leave and roll up. If the leave have some hole or it is too thin, use two leaves.
  • When you have prepared all the rolls, place the clove of garlic in a pan with the olive oil and stir fry for a bit.
  • Place the rolls in the pan, let cook both sides and then simmer with white wine untile reduce.
  • When the meat is cooked, the rolls are ready!

Lemon Salmon and Courgettes

The salmon is a fish I like, but I always need to find a way not to let it be cloy, nasty. This recipe is very quick and easy, me and my boyfriend like it very much.



Ingredients
Salmon 450 gr
1 Lemon 
1 Tablespoon Créme Fraîche
Parsley
Black Pepper 
 Milk

  • Warm the pan. Place the salmon and let cook until you see that it is cooked until the middle.
  • At this point, turn the fish and let cook completely.
  • Now add the lemon juice until reduce.
  • Add the tablespoon of créme fraîche, and if it needeed, add a little bit of milk to make it creamy.
  • Add the parsley and the pepper.
  • Serve with a side dish of courgettes, cooked with a little bit of olive oil and chopped onion. Salmon and courgettes are the perfect match!

Whole Wheat Pasta with Savoy Cabbage and Gorgonzola

Two years ago, when I had a few ingredients in my fridge, I've discovered this delicious combination of ingredients: savoy cabbage and gorgonzola. Even my father likes this dish, although he doesn't like this kind oh cheese. Did I convince you?


Ingredients
Whole Wheat Pasta 210 gr
Savoy Cabbage 1/2
Gorgonzola 120 gr.
Milk 1/2 glass
Garlic
Extra Virgin Olive Oil
Salt

3 servings

  • Cut the savoy cabbage and then wash it.
  • In a pan let golden the clove of garlic with the extra virgin olive oil.
  • Add the chopped savoy and let cook.
  • When it is ready, take the gorgonzola and put it in another pan with the milk. Wait until it will become creamy.
  • Now add the savoy cabbage in the pan in which there is the cheese.
  • Add your drained pasta.
  • That's it!

Fish Curry with Potatoes

When it comes to fish, my mother and I don't have many ideas about the recipe to use. Moreover,my father and my brother don't like it very much. But this recipe made my brother happy, so now it's time to share it with you!

Ingredients
Frozen Fish (as Cod)
Onion
Curry Powder
Milk
Flour
Boiled Potatoes

In this recipe it is difficult to say the amount of the ingredients, because it depends on how many people there are, on your taste... But I try to give you an idea! 
  • Slice the onion and stir fry with the olive oil and a little of curry powder.
  • When soften, add the frozen fish and let defrost.
  •  When it is cooked, add more curry powder, a fistful of flour and the milk, in order to make a gravy.
  • In the end, add the boiled potatoes to become tasty.
  •  Season with salt.

Sardian Recipe "Mazzamurru" - How to Reuse Stale Bread

Raise your hand if you always don't know how to reuse the stale bread and you don't want to throw it away. I have a super easy solution to this issue, my recipe! That's an old Sardian recipe.


Ingredients

Stale Bread
Warm Water
Parmesan
Pecorino cheese
Cheese (like Cheddar)
Black Pepper

  • Put some tomato sauce on the baking tray.
  • Cut the stale bread into slices.
  • Immerse the bread into the warm water and then squeeze it.
  • Place the slices on the tray.
  • Now put some tomato sauce up to cover the bread surface. 
  • Add grated parmesan and/or pecorino.
  • Add some cheese pieces and season with black pepper.
  • Now repeat the process in order to do another layer.
  • Now put in preheaten oven at 180° until the cheese will be melted.
