Chicken Breast with Vegetables Mix

This recipe is easy as always and I want to share it with you because it's a really good way to eat chicken with vegetables without cooking a greasy dish. Let's see the ingredients!


Aubergines 1
Courgettes 1
Potatoes 1
Peppers 1
Onion 1
Chicken breast 
Oregano
Olive oil
Salt

3 servings

  •  Preheat the oven at 180°-200°.
  • Chop the vegetables and add a little bit of olive oil and the oregano.
  • Put in the oven for 40 minutes and turn sometimes in order not to burn the top.
  • Now add the chopped chicken and cook for further 20 minutes.
  • Season with salt.

Enjoy your meal!

Honey and Lemon Chicken

Hi people, I'm back! I was really really busy these days so I didn't had time to post new recipes but here I am now! This recipe is easy but very good, as always! Are you ready?


Ingredients

2 Chicken Breast
1 Lemon
3 teaspoons of Honey
Extra Vergin Olive Oi1 
1 glass of White Wine
Salt

  • Cut the chicken breast into little stripes and flour it.
  • Put some olive oil in a pan and let warm. When it is warm enough, add the chicken. 
  • Let cook well and then simmer with the white wine until reduced.
  • Then add the lemon juice and let cook slowly.
  • At the end, add the honey and let caramelize. Season with salt!

Tex-Mex Fajitas - My Recipe

My family and I really love Fajitas! In every place I go, the fajitas recipe is different. Some version is very hot, another has two kind of meat... Seems like everybody has his own fajitas recipe, so that's mine!



Ingredients
800 gr Chicken Breast
400 gr Red Beans
1 Yellow Pepper
1 Red Pepper
1/2 Onion
Tex-Mex Spices
Salt
Tortillas


  • First you have to cut the peppers into thin strips and stir fry with olive oil and the chopped onion.
  • While the peppers are cooking, cut the chicken breast lengthway, into long strips, more or less of the same size of the peppers.
  • When the peppers are almost ready, add the chicken and let cook.
  • Add the Tex-Mex spices, the salt and if you want, even the Tex-Mex sauce, the red one with tomato and peppers inside.
  • When even the chicken is cooked, aff the red beans and turn off the heat.
  •  Add some salad, tomatoes and sweet corn in every tortilla.
  •  So yummy!!!

Chicken Escalopes with Champignon Mushrooms

After all these days of feastes, we need to eat something lighter. This recipe is tasty but light, perfect to eat something good but not fat ;)



Ingredients

Chicken Escalopes
Garlic
Parsley
Champignon Mushrooms
Flour
Salt
Milk
Extra Virgin Olive Oil
  • Stir fry the clove of garlic with the olive oil. 
  • When it is golden, add the chopped and washed mushrooms and the parsley.
  • When the mushrooms are almost ready, flour the chicken escalopes and add them to the mushrooms.
  • Let cook for few minutes and then add some milk to make a creamy sauce.
  • Season with salt.

Savoy Cabbage Rolls

 I've bought a very big savoy cabbage and I didn't know how to cook it, so I've done my usual internet researches and everybody talked about savoy cabbage rolls. So I decided to make my own version.



Ingredients
350 gr Mince Beef Meat
50 gr Bread 
1 Egg
1 Garlic Clove
Chopped Parsley
White Wine
Salt
Pepper
Cinnamon (optional)
With this amount of ingredients came up 13 rolls to me.

  • First, you have to boil for few minutes the cabbage leaves. You will need one for every roll.
  • In the meantime, place in a bowl the meat, the egg, the minced garlic and parsley, salt and pepper, and the bread, softened with water. Mix it until it is compact.
  • If you want, you can add some slice of salami or a sausage to make the meat tastier.
  • Now put a meatball in the cabbage leave and roll up. If the leave have some hole or it is too thin, use two leaves.
  • When you have prepared all the rolls, place the clove of garlic in a pan with the olive oil and stir fry for a bit.
  • Place the rolls in the pan, let cook both sides and then simmer with white wine untile reduce.
  • When the meat is cooked, the rolls are ready!

Red Wine Pork Loin - Super Easy and Tasty

In my opinion, the simple things are always the tastiest. This recipe is a proof of my point of view, since it's made ​​with only three ingredients ... meat, red wine and olive oil, and it is obviously very good and tasty!


Ingredients
Red Wine
Extra Virgin Olive Oil
Pork Loin
Salt

  • Take a pan and put some olive oil in it. Let warm. The olive oil must cover the whole pan's surface.
  • When the oil is warm, place the pork loin in the pan.
  • Let cook every side of the loin.
  • Now you can simmer with the red wine until reduce.The amount of wine depends on your taste, if you like its flavour, add a lot.
  • The cooking time changes depending on the size of the loin. To be sure it is cooked, start to slice it, and, in case, keep on cooking.
  •  Now let cool the meat and then cut into slices.

Italian Version of the Hamburger

As you know, the hamburger is not an Italian recipe at all, but here in Italy every butcher sells every kind of hamburger, with chicken, with spinach, with mixed meat and so on. We even eat pork burgers, although I know that it's almost a crime for an American, because the real burger is made by beef 100%. Anyway, this is my recipe. Don't be shocked :)


Ingredients
400 gr. Beef and Pork Meat
1/2 Egg
1/2 Onion
 2-3 tsp Mustard
Breadcrumbs
Paprika
Parsley
Black Pepper
Salt

Every hamburger weighed 90-100 grams, more or less.

  • Finely chop the parsley and the onion.
  • Mix all the ingredients together.
  • Shape the meat as a disk, as you can see in the picture below.
  • Cook your hamburgers in a pan or in a grill!

Baked Peppers Meatballs

If you remember, some time ago I published the recipe of the stuffed peppers. Well, with the remaining stuffing, you can make some amazing peppers meatballs, or cook them from scratch because they are AMAZING!



Ingredients

1 Little Pepper
400 gr Ground Meat (I've used beef and pork)
5 Basil Leaves 
5 Salami Slices
1 Clove of Garlic 
1 Egg
1 Bread Slice
Cheddar
Breadcrumbs
Oregano
Black Pepper
Parsley
Olive Oil
Water

  • After removing the seeds from the pepper, mix all the ingredients together. Use the blender to make the job easier.
  • Now take a little of the mixture and shape a ball. Keep on doing this until the mixture is finished.
  • Preheat the oven at 180°.
  • Take a baking tray with the baking paper and place the meatballs.
  • Bake for about 20 minutes. Obviously you can even fry them, but I prefer to "stay healthy" ;)

Stuffed Peppers

My boyfriend and I love peppers. When the peppers are even stuffed... we can't ask for anything better! You can basically stuff with the food you prefer, you can even do the vegetarian version and I'm sure that it will be amazing!


 Ingredients

6 Little Peppers
400 gr Ground Meat (I've used beef and pork)
5 Basil Leaves 
5 Salami Slices
1 Clove of Garlic 
1 Egg
1 Bread Slice
Cheddar
Breadcrumbs
Oregano
Black Pepper
Parsley
Olive Oil
Water

  • Wash the peppers and cut the upper part. Remove the white filaments and the seeds. Hold them by.
  • Now mix all the ingredients together with a blender. Grate the cheddar or the cheese you prefer, add a little bit of olive oil and water to make the mixture creamy. Add the bread slice after softening with some water.
  • When the stuffing is done, fill the peppers and put the breadcrumbs on the top.
  • Bake in pre heatead oven at 200° for about 25 minutes.
  • If there is leftover mixture... stay tuned for another recipe!

Crunchy Chicken Wings - Baked

If you like to eat chicken wings, you have definitely to try this recipe! The taste is amazing, and it is healthy at the same time! Thanks to my mum for this recipe ;)


Ingredients

Chicken wings 1 kg
Breadcrumbs
Oil
Rosemary
Garlic 2 cloves
Sweet paprika
Turmeric
Salt

  • Chop up the rosemary with the garlic. 
  • Mix it with the other spices and with the breadcrumbs. 
  • Lightly brush the wings with the oil.
  • Put the wings into the breadcrumbs and place them in a baking tray with the baking paper.
  • Sprinkle with a little bit of oil and salt.
  • Bake in oven at 180° for about 30 minutes.
  • Turn halfway through cooking.

Turkey Roll with Parmesan and Salami

Today I going to tell you a very easy recipe, "invented" by me more then one year ago, when I was in Rome to do a stage. At home I had a very little fridge and I cooked those rolls with the few ingredients that I had in it. Nevertheless, they were really good so I'd like to share this recipe with you.



Ingredients

Turkey escalopes
Salami slices
Parmesan or other cheese
Extra virgin olive oil
Garlic 1
White wine

  1. The turkey escalopes must be very thin, otherwise they won't cook very well inside. You can pound them if they are not thin enough. Put one slice of salami and one piece of cheese, then roll it and, if it is needed, block with a toothpick.
  2. After you have done all the rolls, place a little bit of olive oil in a pan with a clove of garlic.
  3. After some minute, place all the rolls and let cook for few minutes. Let cook both sides.
  4. Now put a little bit of white wine and simmer until reduced. The quantity depends on how many rolls you have prepared. 
  5. When the meat is cooked, the dish is ready. If it is necessary add a little of water.

Traditional Italian Meatballs

Hi people,

Sooner or later I had to write my recipe of meatballs. Probably, it is one of those dishes that make you think about Italy, after pasta and pizza of course! This is my first time I've cooked them and they were very good so... here the recipe!
 


Ingredients

Ground Beef 350 gr
Egg 1
Garlic 1 clove
Parsley
Parmesan 
Breadcrumbs
Tomato Sauce 400 gr
Onion 1/4
Extra virgin olive oil
Salt
Sugar 1 teaspoon

Super Flavorful Goulash Soup

Hello world an Happy New Year!
This is my first post of 2014 and I've chosen a super tasty recipe to inaugurate the new year! What am I talking about? The gulash soup recipe! This dish is Hungarian, but it is widespread in all over the East Europe. There are two versions of the gulash: gulash soup or gulash meat, which is a stew with the same ingredients, more or less.
Let's see how to cook this gulash soup.


Ingredients

2 onions
1 carrot
500 gr potatoes 
1 pepper
600 gr of stew beef meat
1 garlic clove
3 teaspoons of sweet paprika
1 teaspoon of cumin
Olive oil
1 lt of vegetable stock (do it yourself!)
Salt

Preparation time: 3 hours

7 servings

1) Chop the onions grossly and cook over very low heat with a little bit of olive oil for 15 minutes. Be careful not to burn the onions, nor to become golden.
2) Add the clove og garlic, the teaspoon of cumin, the beef stew and let cook for few minutes.
3) Add the 3 teaspoons of sweet paprika, one spoonful of stock, salt and let cook over very low heat for 90 minutes with the saucepan lid.
4) Now you can add the chopped pepper and carrot, all the stock the and let cook for 45 minutes.
5) Now add the chopped potatoes (big pieces as the beef stew) and cook for 45 minutes.
With this very slow cooking, the meat will become very tender and the vegetables will remain compact.

My family liked this soup very much, hope you too!

P.s. I've taken this recipe from this site, which is very famous in Italy, but I've changed some ingredients and time of cooking.

Meat Roll with Eggs and Ham - Perfect for Christmas!

Good morning people!

Here I am today with a tasty recipe, perfect to amaze your guests for Christmas lunch or dinner!
Let's see the ingredients you will need.



Ingredients

2 Eggs
Parsley
Garlic
Cheese (fontina or cheddar)
Mortadella (or ham)
Beef meat
White whine
Olive Oil

This recipe is not difficult to make, but you'll need some time to accomplish every step.

1) Take 2 eggs, mix them and cook an omelette.
2) Take the meat (about 800 gr) and place the omelette on it.
3) Add some chopped garlic and parsley. Add the mortadella (as much as you want) and the sliced cheese.
4) Now roll up the meat with all the ingredients inside and tie everything with a twine, in order not to let open the meat while you'll cook it.
5) Place in a pan and let cook with one clove of garlic and extra virgin olive oil. After few minutes simmer with the white wine until reduced.
6) Let cook for an hour and turn the meat every 15 minutes to cook very well every side.

Then, the recipe is over! It is not so difficult, is it?

Healthy and Yummy Chicken Curry

Hi people!
Okay, I know. This is not an Italian dish at all, but it's my favourite chicken recipe and I want to share with you my version of it. My mother and I are crazy about it and we would eat this dish everyday if it was possible!

Ingredients
Chicken
Carrots
Onions
Greek yogurt
Curry
Salt
Olive Oil

1) Cut the onions and the carrots in a good measure, depending on your taste, obviously. For my part, I like a good deal of it.
2) Place the onions and carrots in a pan and add the olive oil. Stir fry until they become golden.
3) Now add the chicken cut in pieces and let cook.
4) Add curry as much as you like and a little bit of salt.


5) Switch off the burner and add the greek yogurt to make the dish creamy.
6) Serve with plain rice



Enjoy your yummy meal!

Turkey in Soy Sauce

Good afternoon people!

Today we are going to talk about meat. That's my first recipe about it and I hope you will like it! This recipe is not Italian, but it's my family's. Indeed, my grandfather used to cook it when in my city international spices were not so easy to find. It's delicious and I really hope that someone, all around the world, will cook it!


Ingredients

Turkey leg or wing
1/2 onion
1 clove of garlic
1/2 cup of white wine
3 or 4 spoons of soy sauce
4 or 5 potatoes
Rosemary
Olive oil
Cut the onion and place it in a pan with the clove of garlic and olive oil. Stir fry, add the turkey and let brown. Now let simmer with white wine until reduced. Then, put on the lid and lower the heat and if you need, add some water. After about 25 minutes, add the potatoes cut into chunks, the soy sauce and a sprig of rosemary. I suggest you not to add salt because the soy sauce is already salty enough. Keep on cooking until the potatoes are soft.
