- To cook instant couscous, pour it into a bowl and pour boiling water over it, following the instructions in the package. Mix it until it's ready and add a little of olive oil
- Cut the aubergine into small pieces and fry it.
- Cut the tomatoes, the feta cheese and the basil leaves.
- Now add the pesto in the cous cous and then the other ingredients.Season with salt and pepper.
- If you don't add the feta cheese is suitable for vegans!
