Mediterreanean Cous Cous - UK National Vegetarian Week

I've read on Tinned Tomatoes Blog that it's started the National Vegetarian Week in UK, so I've decided to post a cous cous recipe. I love cous cous, it's not difficult to cook, and you can cook it with many ingredients and spices... You can just play around with your imagination! This recipe is very good warm but even cold... perfect as a main course for summer!


Ingredients
Cous Cous 300 gr
Aubergine 1
Tomatoes 4-5
Pesto Sauce 1-2 Tablespoons
Basil leaves 8-10
Feta cheese 100 gr
Extra Virgin Olive Oil

  • To cook instant couscous, pour it into a bowl and pour boiling water over it, following the instructions in the package. Mix it until it's ready and add a little of olive oil
  • Cut the aubergine into small pieces and fry it.
  • Cut the tomatoes, the feta cheese and the basil leaves. 
  • Now add the pesto in the cous cous and then the other ingredients.Season with salt and pepper.
  • If you don't add the feta cheese is suitable for vegans!
